- 3cm piece fresh ginger
- 1 garlic clove
- 1 tbs peanut oil
- 500g pork mince
- 1 red onion
- 200g green beans
- 250g pkt microwave 90 second jasmine rice
- 85g 1 u20444 cup ayam thai chilli jam
- 2 tbs light soy sauce
- 125ml 1 2 cup massel chicken style liquid stock
- 55g 1 3 cup roasted peanuts
- 1 long fresh red chilli
- fresh thai basil sprigs to serve

- place a large frying pan over high heat
- while the pan heats up peel and finely grate the ginger peel and crush the garlic
- once the pan is hot add the oil then the pork cook breaking up the mince with a wooden spoon for 2 3 minutes or until well browned
- meanwhile cut the red onion into wedges cut the green beans into 5cm lengths
- add the ginger garlic onion and beans to the pan and cook tossing for 2 minutes or until the onion softens slightly
- while the bean mixture cooks microwave the jasmine rice following packet directions
- add the chilli jam soy sauce and chicken stock to the pork mixture and toss until well combined divide the rice and chilli jam pork among serving plates or pile onto a serving platter coarsely chop the peanuts and slice the chilli sprinkle the peanuts chilli and basil on top of the pork to serve
