Fried rice is the ultimate quick and easy weeknight meal, whether served as a main or side. This version uses microwave rice, so its ready in under 30 minutes.
The ingredient of Vietnamese Style Fried Rice
- 2 tablespoons soy sauce
- 1 teaspoon caster sugar
- 2 tablespoons cobram estate chilli coriander infused extra virgin olive oil
- 3 garlic cloves crushed
- 500g chicken breast mince
- 1 carrot peeled finely chopped
- 200g sugar snap peas
- 450g packet 2 u00bd minute microwave jasmine rice
- 1 tablespoon fresh lime juice
- lime wedges to serve optional
- thinly sliced green shallots to serve optional
The Instruction of vietnamese style fried rice
- combine soy sauce sugar and 2 teaspoons of oil in a small bowl stir until sugar dissolves set aside
- heat 1 tablespoon of the oil in a large deep frying pan over high heat cook garlic and mince breaking up with a wooden spoon for 5 minutes or until browned add carrot and cook for 2 minutes or until almost tender
- add sugar snaps and 2 tablespoons water to the pan cook stirring for 2 3 minutes or until tender add rice and cook stirring for 1 2 minutes or until rice has heated through
- add soy sauce mixture and lime juice toss gently until rice is coated in soy sauce mixture add the remaining 2 teaspoons oil toss to combine divide among serving bowls serve with lime wedge and shallots if desired
